1. Cucumber Salad

Ingredients:

1 large or 2 medium English cucumbers

2 tbsp. toasted sesame seeds

1 teaspoon stevia

1/4 teaspoon salt

1/4 cup rice vinegar

Directions:

Peel the cucumbers while leaving alternating green stripes. Then slice the cucumbers in half lengthwise, scraping the seeds out with a spoon.
Using a food processor or knife cut the cucumber into very thin slices. Put the slices on a double layer paper towel, while squeezing them gently to remove any excess moisture.
Blendthe salt, stevia and vinegar together in a medium bowl. Stir until the salt dissolves. Finally, add the cucumbers and sesame seeds.
Toss well to combine and serve immediately.

2. Endive and Cucumbers Salad

Ingredients:

200 grams of cucumbers

90 grams of endives

10 grams of black olives

Olive oil

Vinegar

Salt

Directions:

After preparing the endives, peel and cut the cucumbers. Wash afterwards.
Mix all ingredients in a bowl.
According to taste, season the salad with vinegar, salt and oil.

3. Spinach with Garlic Vinaigrette

Ingredients:

6 cups baby spinach leaves or about 6 ounces

2 minced garlic cloves

1/4 cup sliced red onion

1/4 tsp black pepper, ground

1/8 tsp salt

1 1/2 tbsp. extra-virgin olive oil

1 tbsp. white wine vinegar

1/2 tsp Dijon mustard

Directions:

Mix all the ingredients, except the red onion and spinach in a large bowl, while stirring well with a whisk.
Add the 6 cups spinach and red onion.
Toss it well to coat.
